Bundiga (Grated banana and snapper in coconut milk)

Ingredients

  • 10 green bananas
  • 2 Whole snappers
  • 1 Can coconut milk
  • 2 tablespoons consume (substitutions can be beef or chicken builloin)
  • 1/4 teaspoon black pepper
  • 1 Sachet garlic powder
  • 1/4 Teaspoon onion powder
  • 1 Small sweet pepper
  • 2 thyme leaves
  • salt to taste

Note

Serve alone, with cassave bread, or with coconut white rice.

Directions

Step 1 Wash, peel, and grate green bananas.
Step 2 Season bananas with 1 tbsp consome, black pepper, and season all.
Step 3 In a pot add coconut milk. Fill empty can with water two times and add to pot.
Step 4 Place pot on medium heat and add salt, onion powder, garlic powder and 1 tbsp consome. Stir occasionally.
Step 5 While the coconut milk is boiling, slowly drop spoonfuls of the banana mixture into the pot. Let boil for 15 minutes.
Step 6 Add seasoned fish and boil on medium heat for 5 more minutes, allowing the fish to cook.
